AWSEC Wine Sensory Series

Palate Calibration Workshops

Train your senses. Trust your palate. A focused workshop series for wine learners and professionals who want sharper, more confident tasting judgement.

Programme Overview

From theory to sensory confidence

Wine knowledge becomes truly useful when it can be felt, compared, and described in the glass. Each Palate Calibration Workshop isolates one tasting element and gives it focused attention through guided comparison, sensory anchors, and expert facilitation.

0Seven standalone workshops across structural foundations and sensory evaluation.
0Carefully selected wine in every session

Who Is This For

For tasters who want precision, not guesswork

The series supports structured wine study, exam preparation, trade refreshers, and personal tasting development. Attend one session for a specific skill, or follow the complete series for a broader sensory foundation.

WSET Level 3 and Diploma students

Build focused tasting repetition outside the pace of a formal course, with dedicated practice on individual structural and sensory elements.

Exam candidates

Sharpen the ability to identify, calibrate, and express tasting evidence quickly and reliably under assessment conditions.

Wine lovers and trade professionals

Refresh the foundations, expand tasting language, and develop a more confident relationship with what is in the glass.

Structural Foundations

Sweetness

Develop a reliable ability to identify and differentiate sweetness levels from bone dry to luscious.

02
Structural Foundations

Acidity

Learn to distinguish refreshing acidity from acidity that gives wine genuine structural potential.

Register

Compare six wines chosen for contrasting acid profiles and develop a framework for assessing freshness, structure, and age-worthiness.

03
Structural Foundations

Tannin

Move beyond "tannic" and read tannin through weight, texture, integration, and quality.

Register

Explore wines showing a range from assertive youthful tannin to fine-grained, polished texture, then practise precise tasting language.

04
Structural Foundations

Body

Build a consistent framework for assessing body and the drivers behind it.

Register

Examine the effect of alcohol, residual sugar, extract, and varietal character through comparative wines at different weight levels.

05
Structural Foundations

Sweetness in Sparkling Wine

Read sparkling wine sweetness from Extra Brut to Demi-Sec and understand dosage.

Register

Taste across the dosage spectrum and learn how acidity, bubbles, and winemaking choices shape the final perception of sweetness.

06
Sensory Evaluation

Aromas in Wine: Primary Flavours

Develop aromatic vocabulary for fruit, floral, and herbaceous characters derived from the grape.

Work with aroma families, sensory anchors, and expressive wines to build vocabulary and tasting memory for WSET-style assessment.

07
Sensory Evaluation

Finish and Length

Develop a consistent method for evaluating persistence of flavour after swallowing.

Compare wines with contrasting finishes and practise the sustained attention required to assess length, complexity, and quality.
