A professional introduction to the culture, craft and service of Japanese sake, taught in Cantonese with Traditional Chinese materials.

The starting point
The Sake Service Institute (SSI) is a non-profit organization founded in Tokyo in 1990 with the aim to provide a global standard in Sake education.
This course builds the knowledge and tasting discipline to understand, describe and confidently serve Japanese sake.
What you will gain
Traditional Chinese course materials make the learning journey feel clear, familiar and practical.
Lectures, tastings and discussion connect production knowledge to what is in the glass.
Successful candidates receive a certificate and badge from SSI International.
Course topics
Across nine connected topics, you will learn how culture, raw materials, production and service shape the sake experience.
Know and state the role and requirements needed to be a Kikisake-shi.
Know and state the history and traditional cultures related to Sake in Japan.
List and understand the properties and contribution of raw materials used in making Sake.
Understand the production process of Sake, how this influences the styles.
List and describe the characteristics of the four main types, and other specialty styles of Sake.
Identify the difference between alcoholic beverages made using different raw materials or methods.
Describe the structure, identify the production techniques used, and assess the quality of Sake in tasting.
List and state the law and labelling terms of Japanese Sake.
Describe the best practice in purchasing, servicing, storing and promoting Sake.
Assessment
Each paper is 50 minutes. The passing grade is 70% for each paper.
